Yum!!! For most of us the pandemic changed quiet a bit of what we do. For me and my family, we switched to buying a grain mill, milling fresh flour when needed, and making bread, not buying bread. Now, some people thinks its crazy, but you know it is something I would have never pictures doing yet thoroughly love even two years later! There is something to be said for working with your hands. The joy of kneeding whole wheat bread, or slapping sour dough on the counter, or even just hand mixing. Find joy, find something that brings you joy while using your hands. Elder Henry B. Eyring said, “You hold in your hands the happiness of more people than you can imagine”. You, each and every one of us makes choices, we choose if we are going to be happy, mad, sad, etc. For some it could be exercising, painting, writing, etc., find what brings you joy, find what you can use your hands to create. These are two of my absolute favorite recipes. 

Whole Wheat Bread

2 1/2 C. Whey, (or milk)

1/4 C. Butter

1/3 C. Honey

Mix and heat up in microwave for about 2 minutes, (Luke warm)

While mixture is heating up add the following to a mixing bowl

2 1/2 tsp. Active Dry Yeast 

1 egg beaten

2 tsp. Salt

5-7 C. Freshly ground Hard red wheat berries, (whole wheat flour)

Add the heated mixture to mixer knead for 6 minutes either by hand or mixer. 

Grease 1  13X4X4 bread pan or 2 smaller bread pans, IF using the large rectangle grease with crispy

Once all combined cover with a towel and let rise for 45-60 minutes

Once doubled place in oven at 335 for 45 minutes


Sourdough, (adapted from Ballerina Farm Recipe) yield 2 loaves

225g starter

600g warm water

Mix together

Add

800g white bread flour

200g whole wheat flour

Mix together/ knead 2 minutes

Let dough rest for 20min.-1hr.

Add

135g warm water

25g salt

Mix really well (5 minutes)

Let dough rest 20 min

Stretch and fold (x3)

Lift in center and fold under

Wait 30 min

Stretch and fold 

Wait 30 min

Stretch and fold 

Rest till double (1-4hrs)

Flour surface 

Flip Fold

Cut in half

Preshape loaves

Flip over, push back, 

Nice tension

Sit on counter for 20min

Flip, push, pull, put in basket

Fridge for 2hr-overnight

Preheat oven to 450

Put parchment paper in bottom of pan then place loaves in pans 

Score loaves

Cover with foil place in oven for 20 minutes then pull foil off and bake for 20 more minutes. 


So no matter what it is, finding something that makes you smile, laugh, something that you can use your hands.
